Creamy Chicken Wild Rice Soup -Simple, tasty & Delicious
Every year as soon as fall hits this is the first soup I make and my kids absolutely love it! It’s nutritious, comforting, and so tasty! We like to eat it with buttered crackers. My cheddar biscuits also go great with this soup!

I have been eating this soup since I was a kid. There are so many different ways to make it. Everyone has their own recipe of it here in the Midwest. Over the years I’ve come up with my own recipe.
I love my wild rice soup full of veggies, creamy, but not too thick , and full of flavor. I use cooked chicken breasts or meat from a whole cooked chicken cut up. I sometimes boil my own and use the stock or I use a cooked rotisserie chicken from Costco. I have also used leftover turkey and that’s good too. It is also just as delicious with using only the vegetables. Something about is so comforting for me.
Minnesota, where we live have the most wild natural rice beds in North America. We get most of our rice from White Earth, MN. The rice is hand harvested by White Earth tribal members. Wild Rice is so good for us and can be used in so many other ways. You will find many other recipes on my page that use wild rice. From baked goods to casseroles, to salads, and many more. Wild rice can be used in place of other rice in a dish but definitely has an earthy flavor that is unique and tasty.

Ingredients you will need
- 4 cups of cooked wild rice
- 2-3 cups of cooked chicken
- 5 medium carrots, peeled and diced
- 3 stalks celery, chopped
- 1 onion, chopped
- 4 cloves of garlic, minced
- 6 Tablespoons butter
- 1/3 c. flour
- 6-8 cups chicken broth
- 2 cups of heavy cream
- 1 tablespoon of fresh parsley or 2 teaspoons of dried parsley
- salt and pepper to taste
How to Make
Step 1 : First rinse and cook your Wild Rice. I rinse my rice about 3 times and cook with a ratio of 1-3, which would be 1 cup of rice to 3 cups of water. Bring to a boil and place lid on and simmer for 20 minutes; set aside.
Step 2: Next peel and chop your onions, carrots, celery, and garlic
Step 3: Then melt the butter in a pot and add your chopped vegetables. Throw in a little bit of salt and pepper and sauté for 3-5 minutes. While still cooking you can sprinkle on the flour and cook for another 2 minutes.
Step 4: After that you want to slowly stir in your chicken broth and bring to a boil. Then simmer for about 15 minutes until the vegetables are tender. I add my cooked chicken, rice, and fresh parsley in at this time and heat through for 5-10 minutes or so.
Step 5: Finally, I add the heavy cream, stir and simmer for another 5 minutes. Add more salt and pepper if needed
Tips:
- This wild rice soup recipe makes a pretty big batch. My family of 7 will almost devour the whole pot so I usually make extra and it stores great in the freezer. You can freeze it without the cream then add the cream after you have heated up but it seems to always be yummy either way!
- Wild rice is sold at most grocery stores in Minnesota, otherwise you can order it online. It is not the same thing as black rice or patty rice.

- Rinse and cook the Wild Rice. 2 cups of wild rice and 6 cups of water; bring to a boil, put a lid on top, turn heat down to low, and simmer for 25 minutes; set aside
- peel and chop up your carrots, celery, onions, and garlic
- Melt the butter in the soup pot and sauté the vegetables for 5-10 minutes. Add some salt and pepper to taste. Sprinkle the flour over the vegetables and cook for another 2 minutes
- Slowly stir in the chicken broth and bring to a boil. Simmer on med-low for 10-15 minutes until your vegetables are tender. Add in the chicken, rice, and fresh parsley (or dried parsley), heat thoroughly.
- Add in the heavy cream and heat an additional 10 minutes. Salt and pepper to your liking and enjoy!
