Our Easter dinner menu for a crowd

Every year I try to create an Easter menu that feels special but still easy to cook for a big family. This year’s Easter Dinner menu is full of comforting classics with a few twists, like crispy fried onion cheesy hashbrowns and brown sugar smoked paprika ham. Everything on this table is comfort food, flavorful, and perfect for feeding a crowd. I have included our menu and a few recipes to go along with it.

Easter Dinner Menu

Appetizers

  • Cold spinach dip with bread cubes and veggies

A classic spinach dip with a twist that serves a crowd and goes great with toasted bread, soft bread, chips, and veggies. A great appetizer that can be made ahead and tastes even better.

  • deviled eggs- everyone knows a deviled egg. I am trying my daughter’s recipe this year which has pickles in it. She says she will never make them another way again.

Main Menu

This ham is coated in a sweet and smoky glaze made with brown sugar, smoked paprika, and butter. It bakes until caramelized and juicy and makes the perfect centerpiece for Easter dinner.

A nutty fresh salad with a citrus dressing that cuts through the rich ham.

A perfect sweet and savory side that’s roasted to perfection.

Make ahead Easter dinner tips-

  • Deviled eggs can be made the day before.
  • The cheesy hashbrown casserole can be assembled early and baked before dinner.
  • Carrot cupcakes can be baked a day ahead and frosted before serving
  • Cook the ham first and let it rest
  • Prep salad earlier in the day
  • Use store-bought rolls if needed

Cheesy Hashbrown Casserole

  • 1 30 oz. bag of frozen hashbrowns
  • 2 cups sharp cheddar cheese
  • 1 cup of sour cream
  • 1 can cream of chicken soup
  • 1/4 cup melted butter
  • 1/2 cup of milk
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon of salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon of paprika
  • 1 1/2 cups crispy fried onions
  • 1/2 cup cheddar cheese

Step 1. Preheat oven to 375 degrees and grease a 9×13 casserole dish.

Step 2. Mix together hashbrowns, 2 cups cheddar cheese, sour cream, melted butter, milk, onions, garlic, salt, pepper, and paprika.

Step 3. place hashbrown mix in casserole dish, cover and bake 35-40 minutes.

Step 4. Remove cover and sprinkle crispy onion and cheese on top and bake another 10-15 minutes.

Step 5. Let rest 5-10 minutes before serving
