Copycat Taco Bell Chicken Quesadillas, but better

These Copycat Taco Bell Chicken Quesadillas are way better than the ones you get at Taco Bell because, for instance they have a lot more filling and they are cooked to golden brown perfection. In addition, they are creamy, spicy, cheesy, and like I said I think better than the ones from TB. I have been making this recipe for years because of course we loved the quesadillas from Taco Bell, also I knew I could make them at home, they would taste better and we didn’t have a taco bell where we lived. These are so easy to make and perfect for a weeknight meal.

Ingredients you will need-

  • 3 cups cooked chicken (I have used cooked chicken breasts, rotisserie chicken, and canned chicken).
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • heaping 1/4 cup chopped pickled jalapenos
  • 2 tablespoons pickled jalapeno juice
  • 2 teaspoons garlic powder
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon onion powder
  • 1 teaspoon sugar
  • 1 teaspoon white vinegar
  • 1/2 teaspoon salt
  • 1 tablespoon of water
  • 2-3 cups cheddar jack cheese
  • 8-10 tortillas
  • butter and oil to lightly grease the pan

How to make-

Step 1. First chop up your jalapenos and mix with the mayonnaise, sour cream, spices, jalapeno juice, vinegar, and 1 cup of cheese.

Step 2. Next mix in the chopped/shredded chicken.

Step 3. After that heat up your pan to medium heat, add a small dab of butter and a teaspoon of oil. Spread the chicken mixture on half of the tortilla (depending on the size of your tortilla I would say add about 3 tablespoons of the mixture). Sprinkle on more cheese, fold and place in pan. Brown on each side for about 2-3 minutes until sizzling, heated through, and cheese is melted.

Step 3. Lastly cut into triangles and serve with sour cream. We also eat ours with siracha or guacamole.

Tips-

  • If you add more filling, it will need to be cooked at a lower temperature and longer time for it to be heated all the way through.
  • Make extra of these! These will get eaten up by those kids and are great snacks to have on hand for hungry teenagers!

Storage-

  • These are great meal/snacks to keep on hand for the kiddos. You can make them up with the filling and store them in a Ziploc bag in the refrigerator uncooked and your teenagers can pull them out and cook them up. Also, you can cook them and store them in the refrigerator, and the kids can put them in the microwave to heat them up when they are hungry.
  • These can be stored in the refrigerator up to 5 days.
  • The chicken mixture can be made ahead of time and stored in an airtight container up to 5 days.

Ingredients
  

  • 3 cups cooked chicken, chopped or shredded
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup pickled jalapenos, chopped
  • 2 tbsp. jalapeno juice
  • 2 tsp. garlic powder
  • 2 tsp. onion powder
  • 2 tsp. paprika
  • 1 tsp. ground cumin
  • 1 tsp. chili powder
  • 1/2 tsp. salt
  • 1 tsp. sugar
  • 1 tsp. white vinegar
  • 1 tbsp. water, to thin
  • 1 tsp. lime juice

Equipment

  • 1 pan, for frying

Method
 

  1. First mix the mayonnaise, sour cream, jalapeno juice, white vinegar, water, and lime juice.
  2. Next add in the seasonings and jalapenos.
  3. Heat up a pan to medium heat. Pour a tsp. of oil and a dab of butter in the pan.
  4. Place chicken mixture on half of the tortilla and sprinkle with more cheese. Cook in the pan about 2-3 minutes per side until golden brown and heated through.
  5. Serve with sour cream and siracha.
