Crispy Caramel Mallows

I am the only person I know who grew up eating these around Christmas time. My Mom always made them, and I am not sure where she got the idea or recipe furthermore, I loved them! They are crispy, gooey, chewy, and fun to make with the kiddos. I don’t make them every year because I like to switch up my Christmas cookies every year, but I recently made these this year with my younger kids who I think have never had them.

How to make recipe-

Step 1. First crush Rice Krispy cereal slightly. You want to leave whole pieces in to for that crunch.

Step 2. Next melt the caramels at 30 second increments until it starts to melt. Slowly add in about half the can of condensed milk and stir. Continue until all the way melted and add the rest of the condensed milk and stir until smooth.

Step 3. Dip marshmallows fully into caramel mixture, then roll in Rice Krispy cereal and place on parchment paper to set.

Tips-

  • You will have to heat up the caramel mixture halfway between making them because it will start to get pretty thick and also hard to work with
  • My favorite way to eat them is cold out of the refrigerator!

Storage-

  • Store in airtight container on the counter or in the fridge. I always make these a few days ahead of time and store them in the refrigerator, also they are fine left on the counter for up to 5 days.

Ingredients
  

  • 1 10oz. bag of large marshmallows
  • 1 14oz. can of condensed milk
  • 1 11oz. bag of caramels
  • 1 box of Rice Krispy cereal

Equipment

  • 2 bowls
  • parchment paper

Method
 

  1. Crush up Rice Krispy cereal slightly, you will need about half the box.
  2. Melt the caramels at 30 second increments; when halfway through add half of condensed milk and stir. Melt again and add the rest of the condensed milk and stir until completely smooth.
  3. Dip marshmallow in the caramel mixture, then roll into the Rice Krispy cereal, and place on parchment paper to set.

Notes

You will have to melt the caramel mixture about halfway through making these as the caramel will thicken and be hard to dip.
These can be made ahead of time and stored in the refrigerator for up to 5 days.
My favorite way to eat them is right out of the fridge!
