Pickled red onions

These pickled red onions are so easy to make and add a bite of tangy flavor to all sorts of dishes. We use them in our potato tacos, salmon rice bowls, or even add them on a sub sandwich. They are so good and I’m actually obsessed with eating them right now as a side to all my food! So, we always have a bowl or jar of them in the refrigerator.

Ingredients you will need-
- 1 large red onion, thinly sliced
- 1 cup hot or boiling water
- 3/4 cup white vinegar
- 1/4 cup lime juice
- 2 Tablespoons sugar
- 1 teaspoon kosher salt
- 1 garlic clove
How to make-
Step 1. First cut your onion in half and thinly slice it.
Step 2. place onions in a glass bowl or jar, add in boiling or really hot water, vinegar, lime juice, sugar, kosher salt, and 1 peeled garlic clove.
Step 3. Stir and set on counter for 30 minutes, then place in refrigerator covered for 30 minutes or until ready to use.

Tips-
- If you want to use right away just use cold water and stir. It will still taste good.
- These seriously elevate so many dishes, tacos, sandwiches, salads, and more
Storage-
- Store in an airtight glass bowl or glass jar in the refrigerator up to 3 weeks. They will still be good but will lose a lot of the onion flavor any longer than that.
