For the Red Velvet Cupcakes, preheat the oven to °350 F. Grease cupcake liners.
Mix oil with buttermilk, food coloring, eggs, vanilla, and vinegar
Add dry ingredients, flour, sugar, cocoa powder, baking soda, and salt. Mix until well combined
Fill each cupcake liner 2/3 full and bake in preheated oven for 18-20 minutes or until toothpick inserted in middle of cupcake comes out clean. Cool completely before frosting.
For the cream cheese frosting. Mix softened butter with cream cheese until well combined. Add in powdered sugar and mix until smooth and creamy. Do not over mix the frosting or it will become a little runny
