Creamy Baked Cajun Cod

This creamy Cajun baked cod is flaky, buttery, and has a golden crust. Serve it with roasted potatoes and green beans for an easy seafood dinner at home.

Ingredients
  

  • 2 lbs. cod
  • 1/2 cup mayonnaise
  • 1 tsp. Cajun seasoning
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/2 tsp. chili powder
  • 1/2 tsp. cayenne pepper
  • 1/2 tsp. lemon pepper
  • 1/4 tsp. black pepper
  • pinch of oregano
  • pinch of thyme
  • splash of lemon or lime juice

Equipment

  • 1 sheet pan

Method
 

  1. First turn the oven to 425 degrees and pat the fish dry with paper towels. prepare baking sheet by placing parchment paper down and brushing with olive oil first before putting fish on top.
  2. Next mix the mayonnaise with the spices and spread on the top of the fish.
  3. Then bake in the oven for 12-15 minutes until flaky and golden brown. Serve with roasted potatoes and garlic green beans.

Notes

Broil the fish for 1-2 minutes if you want a more golden crust.
