Homemade Macaroni and Cheese

Creamy, rich, and decadent!
Course: Side Dish

Ingredients
  

  • 16 oz. elbow macaroni
  • 6 tbsp. butter
  • 6 tbsp all purpose flour
  • 1 1/2 cup whole milk I have also used 2% and it works fine
  • 3/4 tsp dry mustard
  • 1 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 3 cup sharp cheddar cheese
  • 3/4 cup shredded parmesan cheese
  • 1 1/2 cup Colby jack cheese
  • 1 can condensed cheddar cheese soup
  • 3/4 cup bacon

Equipment

  • 1 9 X 13 baking dish
  • 1 large sauce pan
  • cheese grater

Method
 

  1. Pre-heat oven to 400 degrees
  2. Prep ingredients like shredding the cheeses, frying the bacon, and cooking pasta until al dente.
  3. Melt butter in large pot, add in flour and cook for a minute or two, then slowly whisk in your milk and cream. Cook on medium until starts to simmer, then turn off the heat and add in your seasonings, 2 cups of sharp cheddar, all of the shredded parmesan, and 1/2 cup of Colby jack; Stir until smooth. Taste for seasoning and add more salt and pepper if needed.
  4. Add your pasta and bacon to the cheese mixture and mix well
  5. place into grease casserole dish, sprinkle on remaining cheese, and bake for 18-20 minutes until golden and bubbly. Cool 10 minutes before serving
