First marinate the chicken in the buttermilk, hot sauce, and seasonings for at least 2 hours (overnight is best).
Next make the Garlic Cajun Sauce by mixing the mayonnaise with the grated garlic, Cajun seasoning, paprika, lemon juice, lemon pepper, mustard, honey, and black pepper. Store in the refrigerator until ready to use.
After that make the coating for the chicken by mixing the flour with cornstarch, Cajun seasoning, paprika, garlic powder, onion powder, lemon pepper, cayenne pepper, salt, and pepper.
Then take the chicken from the buttermilk and dip into the flour mixture, dip back into the buttermilk mixture, and again back into the flour mixture. Shake off and place on a baking tray and let the chicken sit for a while. I placed mine in the refrigerator for 30 minutes.
After that heat the oil in a heavy bottomed pan to 350 degrees. Fry chicken 5-6 minutes on each side. Place on a wire rack and let it sit for 5 minutes before placing on bun.
Lastly butter buns and brown in pan then place chicken on bottom bun, pickles and Garlic Cajun Sauce on top bun. Enjoy!For second version place chicken then pepper jack cheese, couple slices of cooked bacon, pickles and Garlic Cajun Sauce.
