Biscuits and Gravy with a kick (bold, spicy breakfast favorite)

Biscuits and gravy have been a cozy weekend tradition in my family for as long as I can remember. Growing up, it was one of those comforting breakfasts that brought everyone to the kitchen, and after my husband and I moved into our first home, it quickly became a tradition in our house too. Over the years, I started making a spicy version because my husband and kids love bold flavors and a little extra heat. This spicy biscuits and gravy recipe is rich, hearty, easy to make, and perfect for feeding a big family on slow weekend mornings.

Ingredients you will need-
- 2 pounds spicy breakfast sausage
- 1/2 medium onion, diced
- 1/2 cup all-purpose flour
- 4 1/2 cups whole milk
- 2 teaspoons black pepper
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt

How to make-
Step 1. First start by browning the sausage in a large skillet over medium high heat. Dice up half of a medium onion and brown with sausage.
Step 2. pre-heat oven to 350 degrees to cook your biscuits. I used the can ones for this recipe, but you can use homemade ones also and its great! Growing up my mom always made these plain drop biscuits, so it was very budget friendly. Bake biscuits 10-12 minutes.
Step 3. After the sausage is done cooking add in the flour and stir for a couple of minutes. (Do not drain the grease, it is what we use to make the gravy).
Step 4. Slowly stir in the milk with a whisk and mix to make sure there are no clumps. Add the spices at this time and let it come to a high simmer while stirring until it starts to thicken, turn down the heat to low and simmer for a few more minutes. Taste for seasoning.
Step 5. Lastly split biscuits in half, ladle on the gravy, and enjoy!
Tips-
- Brown the sausage well for deeper flavor and texture
- Season in layers instead of adding all the spice at once
- Keep whisking the gravy to prevent lumps and keep it creamy
- Use warm biscuits so they soak up the gravy perfectly
Storage-
- Store in an airtight container in the refrigerator for up 3 days. Microwave and serve.

Add the seasonings and heat to a high simmer on medium heat until it starts to thicken, turn the heat down to low and simmer for a few minutes. Taste for seasoning
