Easy Camping Chicken Fajita Quesadillas

So originally, I was going to make a chicken Fajita salad but I went to grab my lettuce out of the fridge, and it was frozen. In our camper we have a smaller fridge so it is pretty packed which can cause food to get frozen. So, in came the idea for the quesadillas which in my opinion were bomb! Ingredients you will need-
- 2-3 cups cooked chicken (I used leftover boneless skinless chicken thighs that were already cut into pieces and cooked)
- 1 small onion, sliced
- 5 small different colored mini bell peppers, sliced
- 3 cups cheddar jack cheese/ I also added 1/2 slice of pepperjack cheese to each one
- flour tortillas
- avocado oil for cooking

How to make-
Step 1. First slice up onions and bell peppers, heat a couple tablespoons of avocado oil in a pan, add the onions and peppers and a little bit of fajita seasoning. Sauté until tender.
Step 2. Add a little bit of fajita or taco seasoning to the chicken with a dash of water and mix up. I also heated mine in the microwave for a minute or so.
Step 3. Next in a pan put a couple teaspoons of oil and add the tortilla, immediately add the sauce (if using), a half slice of pepperjack cheese, then spread chicken on one side, top with onions and bell peppers, and shredded cheese over the whole thing. Flip the one side of tortilla over and press down then flip the whole thing and cook the other side until browned and crispy.
Step 4. After done cut into triangles and serve with sour cream, lime, and siracha.

- First slice up the onions and bell peppers. In a skillet heat up 2 tablespoons of oil and sauté the onions and peppers until tender. Add a little bit of fajita seasoning and stir in.
- Next heat up a couple teaspoons of oil in pan and add tortilla. Immediately add the sauce if you are using it, add 1/2 slice pepperjack cheese, then sprinkle on cooked chicken on one side, then add the onions and peppers, sprinkle on cheese over the whole thing. Flip the other half of tortilla over and press down. Flip the whole thing and cook the other side until golden, crispy, and everything is melted together.
- After cooked slice into triangles and serve with sour cream, lime, and siracha.
