We had a rainy stormy day at the campground today and there’s nothing better than a warm, comforting meal to feel good about having to be indoors in the camper. This Marry Me Chicken Gnocchi combines tender chicken, pillowy gnocchi, and a creamy sun-dried tomato sauce into one cozy skillet dinner that’s surprisingly easy to make in a camper kitchen. It’s rich, satisfying, and one of those meals that has everyone asking for seconds.

Ingredients you will need-

  • 2 pounds boneless skinless chicken thighs, cut into bite size pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 2 cups chicken broth
  • 2 tablespoons tomato paste
  • 2 tablespoons chili crisp
  • 1 cup heavy cream
  • 1/2 bag fresh spinach
  • 1/2 cup chopped sun dried tomatoes in oil
  • 3/4 cup shredded parmesan cheese
  • 1 package 16-ounce shelf stable gnocchi
  • fresh basil or parsley for garnish

How to make-

Step 1. First cut up the chicken into bite size pieces and season with salt, pepper, paprika, and Italian seasoning. In a large skillet heat up a couple of tablespoons of avocado oil on med- hi heat. Add the chicken and cook for about 12-15 minutes, stirring occasionally.

Step 2. Next remove chicken from pan and add in the butter and sauté the minced garlic and the sun dried tomatoes for about two minutes on medium heat. Then add in the tomato paste, chili crunch, chicken broth, heavy cream, and parmesan cheese. Mix well until everything is combined and cheese is melted.

Step 3. After that add back in the chicken and the gnocchi and cook for about 10 minutes until the gnocchi is tender. Add in the spinach and fresh basil. Cook for another 1-2 minutes until the spinach is wilted.

Step 4. Serve with some extra parmesan on top.

Tips-

  • When cooking the chicken make sure to get a nice sear on all sides, that gives the chicken extra flavor.
  • Gnocchi cooks quickly and can become mushy if left in the sauce too long.
  • If the sauce thickens too much add in more chicken broth.
  • Use fresh grated parmesan as it has more flavor and will make the sauce taste better.

  • 5 garlic cloves, minced
  • 1/2 cup sun dried tomatoes in oil, chopped
  • 2 tbsp. tomato paste
  • 2 tbsp. chili crunch/ 1 tsp. red pepper flakes
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 bag fresh spinach
  • 3/4 cup shredded parmesan
  • 1 16 oz. package shelf stable gnocchi
  • fresh basil or parsley for garnish

Equipment

  • 1 large skillet

Method
 

  1. First cut up the chicken into bite size pieces and season with salt, black pepper, paprika, and Italian seasoning. Heat the skillet on med-hi heat, add in the oil, and sauté the chicken for 12-15 minutes, making sure to get a nice sear on both sides.
  2. Next remove the chicken from the pan and set aside, heat up 3 tablespoons of butter, add garlic and sun-dried tomatoes, and sauté for a couple of minutes. Add in the tomato paste, chili crunch, chicken broth, heavy cream, and parmesan cheese. Stir until smooth and melted.
  3. After that add back in the chicken and gnocchi and cook for 8-10 minutes until the gnocchi is tender. Add in the spinach until wilted.
  4. Finally top with fresh basil or parsley, extra parmesan cheese, and serve with garlic bread.
