Sausage and Egg Breakfast Boats

A simple hearty way to feed a hungry family with minimal effort

Ingredients
  

  • 2 loaves French bread
  • 10 large eggs
  • 1/2 cup heavy cream
  • 2 cups shredded cheddar jack cheese
  • 1/2 block cream cheese
  • 1 lb. cooked breakfast sausage
  • 4 green onions, sliced
  • salt and pepper
  • 3-4 tbsp. melted butter, for brushing on the bread

Equipment

  • 1 baking sheet pan

Method
 

  1. First pre-heat the oven to 400 degrees. Hollow out the middle of the bread and brush with a little melted butter. Bake in oven for 5 minutes.
  2. Next whisk the eggs with the heavy cream, salt, and pepper.
  3. Then sprinkle about 1/4 cup of cheese into bottom of each loaf. This creates a layer, so the bread doesn't get soggy. Dot with the cream cheese, sprinkle in sausage and green onion.
  4. After that you can pour in the egg mixture, half into each loaf. Sprinkle on the rest of the cheese and place in the oven. Bake for 30-35 minutes or until set. If it starts to get to brown, cover with tinfoil.
  5. When done let the loaves sit for at least 5 minutes before cutting into.
